Was given a bottle of Prosecco for Christmas. Well that was a waste of money disgusting stuff. Prefer a good Merlot or Sancerre and if I have to drink a sparkling wine a good Cava.

Prosecco always seems to have a unappealing metallic aftertaste, I'm not a fan unless its mixed with something else.  I read its fermented in metal vats rather than wood?

Don't know if it works the same as cider but anyone who's ever made that will know that wood is essential and steel is a big no-no.

Most champagne houses use metal . The only champagne house i know that matures in wooden barrels is Alfred Gratien and its very good. After tastes of Brioche.
