I like most cheeses except for some of those sill French soft cheeses, a nice piece of Cheddar is as good as any.
However I am on a low fat diet and am having to avoid cheese which is difficult. I would have been happier ignoring this thread
I love all cheese & that's why my cholesterol level has gone through the roof during the lockdowns & resulted in a yellow card from the doctors.

Dorset Blue Vinny. Unpasturised so the truckle has to be cut on a different wire cutter from pasturised cheese cutters. Beautiful cheese.
Chesseus. I think it gets a name check in The Bible.
Unless you buy your cheese from a local farmer that makes cheese the correct way and respects his animals, anything you buy from a chain store / supermarket is coming from a bad place
These days I buy Veg cheese, there's some really good ones about now

An aged Gouda or a bit of Comte for me.
I was walking down the road the other day when this boy threw a lump of cheese at me. I thought to myself that is not very mature.
Epoisse. Waitrose sometimes sell it. (The smelliest cheese I've ever encountered is Maroille, a real nose-holding experience but tasted ok)

Love aged Gouda (Old Amsterdamer) and Roquefort.
Some of the Croatian hard cheeses from the islands are fantastic

Currently love Wrekin Blue but also extremely fond of Cashel Blue and Oxford Blue. Of harder cheeses, it has to be Swaledale.

The easiest one to find is Wookey Hole Cave Aged - it's actually made in Dorset and then brought back up I think so not fully authentic but it is available in most supermarkets.

Like most things, we have slowly begun to get used to the mass produced supermarket slop (see sausages, bacon, seasonal veg etc) but if you can get hold of the authencitcally made stuff its like eating a different food entirely.
I can go for most cheeses but am particularly partial to a good Cheddar, Gouda, and Stilton. I also like to indulge occasionally in Limburger but am not allowed to bring it in the house and am banished to the garden to eat it.
I'm a sucker for good quality cheeses. I love some of the Alpine cheeses particularly Beaufort and a well aged Comte. I think the UK is producing an increasingly good variety of artisan cheeses I particularly like St James ewe's milk and good old Keen's cheddar.
