seriously though can anyone tell me why clubs announce the signing of a player for 'an undisclosed fee' and not say what they really paid

Some clubs prefer to keep their financial dealing private, no problem with that.  The only exception is where a club is publicly quoted on a stock exchange - they have to be more open about their costs etc.
